We’ll guide you through a simple marinade and cooking process for a truly satisfying meal.

Pressure Cooker Roast Beef: A Flavorful & Tender Meal in Less Time!

Roast beef is a staple comfort food, often associated with special occasions and hearty family dinners. Traditionally, achieving perfectly tender roast beef requires hours of slow roasting. However, with a pressure cooker, you can enjoy the same delicious results in a significantly shorter amount of time.

A good marinade is the key to infusing your roast beef with flavor. This recipe utilizes a blend of aromatic spices and acidic ingredients to tenderize and enhance the meat’s natural taste. The acid in the marinade (cider vinegar and lemon juice) helps to break down the protein fibers, while the spices create depth and complexity. Let’s get to the recipe!

Pressure Cooker Roast Beef Recipe

Yields: 6-8 servings
Prep time: 20 minutes (plus marinating time, minimum 30 minutes, optimal overnight)
Cook time: 60-75 minutes (plus pressure release time)

Ingredients:

  • Beef meat -1kg (Chuck roast or Round roast recommended)
  • Marinade:
    • Cloves – 4
    • Black pepper – 10 whole peppercorns
    • Bay leaves – 2
    • Garlic paste – 2 tsp
    • Ginger paste – 1 tsp
    • Sumac – ½ tsp
    • Salt – to taste
    • Paprika – ½ tsp
    • Olive oil – 2 tbsp
    • Cider vinegar – 1 tbsp
    • Ground black pepper – to taste
    • Lemon juice – 1 tbsp
  • Olive oil – 2 tbsp (for searing)
  • Butter – 2 tbsp (for searing)
  • Onion – 1 medium, chopped
  • Tomato – 1 medium, chopped
  • Mixed peppers – 4 tbsp, chopped
  • Spring onion -1 tbsp, chopped (for garnish)

Instructions:

  1. Marinate the Beef: In a bowl, combine all marinade ingredients. Rub the marinade thoroughly all over the beef. Cover and refrigerate for at least 30 minutes, or preferably overnight, for maximum flavor penetration.
  2. Sear the Beef: Remove the beef from the refrigerator and let it sit at room temperature for about 20 minutes. Heat olive oil and butter in the pressure cooker using the sauté function. Sear the beef on all sides until browned, about 3-4 minutes per side. This step is crucial for developing a rich, flavorful crust.
  3. Sauté Vegetables: Remove the beef from the pressure cooker and set aside. Add chopped onion, tomato, and mixed peppers to the pressure cooker and sauté until softened, about 5-7 minutes.
  4. Pressure Cook: Return the beef to the pressure cooker. Add 1 cup of water to the pot (ensure the liquid doesn’t exceed the maximum fill line of your pressure cooker). Secure the lid and set the pressure cooker to high pressure for 60-75 minutes, depending on the size and cut of your beef.
  5. Natural Pressure Release: Once the cooking time is complete, allow the pressure to release naturally for 15-20 minutes. Then, carefully release any remaining pressure manually.
  6. Rest & Serve: Remove the beef from the pressure cooker and let it rest for 10-15 minutes before slicing against the grain. Garnish with chopped spring onion and serve with your favorite sides.

Serving Suggestions: Roast beef pairs perfectly with mashed potatoes, roasted vegetables (carrots, potatoes, parsnips), Yorkshire pudding, or a fresh green salad. A rich gravy, made from the pan drippings, elevates the dish to the next level.

Enjoy!
