Looking for a hearty and healthy soup to warm you up? This Chickpea and Chayote Soup is a delightful blend of flavors and textures, combining the earthiness of chickpeas with the mild, slightly sweet taste of chayote squash.
Ingredients:
- Olive oil to taste
- Onion – 1 medium
- Carrot – 1 medium
- Chayote – 1 medium
- Garlic cloves – 3
- Meat stock cube – 1
- Chicken breast – 150gr
- 1 Can of boiled chickpeas (approximately 400g/14oz), drained and rinsed
Instructions:
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Dice the onion and carrot and sauté until softened, about 5-7 minutes.
- Mince the garlic and add it to the pot, cooking for another minute until fragrant.
- Cut the chicken breast into small pieces and add it to the pot. Cook until browned.
- Peel and dice the chayote squash. Add it to the pot along with the drained chickpeas.
- Add the meat stock cube and enough water (approx. 6-8 cups) to cover the vegetables and chicken.
- Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the chayote is tender.
- Season with salt and pepper to taste.
For a creamier consistency, partially blend the soup with an immersion blender. Enjoy!
