Instant Pot Lamb Korma: A Flavorful Journey to Indian Cuisine

Korma, originating from the Mughal cuisine of the Indian subcontinent, is a dish historically associated with royalty. Its name derives from the Urdu word korma, meaning ‘braised’ or ‘stew’. Unlike many Indian curries, Korma emphasizes milder flavors, souring in a gravy based on yogurt, cream, and ground nuts. While recipes vary significantly across regions and families, the core elements remain: a rich, creamy sauce complemented by a delicate balance of spices.

Traditionally, Korma was prepared with slow-cooking methods, allowing the meats to become incredibly tender, and the flavors to meld beautifully. Thankfully, the Instant Pot replicates this effect in a significantly shorter timeframe, making it perfect for weeknight dinners or when you’re entertaining guests. This recipe focuses on lamb, but Korma can also be prepared with chicken, beef, or even vegetables.

What Makes this Korma Special?

This recipe distinguishes itself through the use of ghee (clarified butter), which lends a unique nutty flavor, and the inclusion of several key spices that create the signature Korma profile. The cashew paste adds a luxurious creaminess, and the optional smoking technique (dhungar method) provides a nuanced, smoky depth that elevates the dish to another level.

Ingredients

  • Lamb: 750 gr
  • Ghee (clarified butter): 4 tablespoons
  • Garlic paste: 2 teaspoons
  • Ginger, grated: 1 teaspoon
  • Salt: to taste
  • Turmeric powder: ¼ teaspoon
  • Chili powder (Piri-piri): ½ teaspoon – adjust to your spice preference
  • Garam Masala: 1 teaspoon
  • Cashews: 35 gr (soaked in water for 30 minutes)
  • Fried Onions: 5 tablespoons
  • Saffron strands: to taste
  • For the smoky flavor (optional): 1 piece of charcoal, 1 piece of aluminum foil, ¼ teaspoon ghee

Instructions (Instant Pot Method)

  1. Sauté the Aromatics: Select the ‘Sauté’ function on your Instant Pot. Add ghee. Once melted, add garlic paste and grated ginger. Sauté for about a minute until fragrant.
  2. Brown the Lamb: Add the lamb to the Instant Pot and brown on all sides. This step is crucial for developing flavor. Season with salt, turmeric powder, and chili powder.
  3. Build the Korma Base: Add garam masala and fried onions to the pot. Sauté for another minute.
  4. Pressure Cook: Add enough water to almost cover the lamb (about 1-2 cups). Close the lid and set the valve to ‘Sealing’. Cook on ‘Manual’ or ‘Pressure Cook’ for 45-50 minutes on high pressure.
  5. Prepare the Cashew Paste: While the lamb is cooking, drain the soaked cashews and blend them into a smooth paste with a little water.
  6. Finish the Korma: Once the cooking is complete, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure. Open the lid carefully.
  7. Incorporate the Cashew Paste: Stir in the cashew paste. Simmer on ‘Sauté’ for 5-10 minutes, stirring constantly, until the sauce thickens to your desired consistency.
  8. Smoky Flavor (Optional – Dhungar Method): Heat a small piece of charcoal until red hot. Place it on a small piece of aluminum foil, add a ¼ teaspoon of ghee to the charcoal. Carefully place the foil packet inside the Instant Pot with the korma. Immediately close the lid and let it sit for 5-7 minutes to infuse the smoky flavor. Remove the foil packet before serving.
  9. Garnish and Serve: Garnish with saffron strands. Serve hot with rice (basmati is ideal) or naan bread.

Tips for the Best Korma

  • Quality of Ingredients: Using high-quality spices and ghee will significantly impact the flavour.
  • Adjust Spice Levels: Customize the chili powder quantity to match your preference.
  • Marinating (Optional): For even more tender lamb, marinate it in a mixture of yogurt, ginger-garlic paste, and spices for at least 30 minutes before cooking.
