Hearty Codfish Curry with Dokhli: A Traditional Comfort Food

Codfish curry, a beloved dish across various coastal regions, takes an exciting turn with the introduction of dokhli. While numerous variations exist, this recipe draws inspiration from Gujarati cuisine, known for its subtly sweet and spicy flavors. Dokhli, traditionally made from whole wheat flour, are small, savory dumplings steamed directly into the curry, absorbing all the delicious flavors. This version uses a blend of sorghum, millet and gram flour for a gluten-free, nutritous twist.

The Flavor Profile

The base of the curry is built upon aromatic spices – cumin, coriander, turmeric, and chili – all common in Indian cooking. The combination of fresh ginger and garlic paste provides a fragrant foundation, while tomatoes add a natural sweetness and acidity. The inclusion of diverse vegetables like potatoes, carrots, green beans, eggplant, cabbage, sweetcorn and peas not only enhances the nutritional value but also contributes a variety of textures to the dish.

The Star: Codfish

Codfish, with its mild flavour and firm texture, is an excellent choice for this curry. It holds its shape well during cooking and readily absorbs the spices, making each bite flavorful. Using thicker pieces helps prevent it from crumbling, ensuring a satisfying experience.
