Portuguese Leek Soup, or Sopa de Alho-Porro, is a beloved dish across Portugal, with regional variations affecting ingredients and preparation. The beauty of this soup lies in its simplicity; it’s a testament to how much flavour can be extracted from humble ingredients. Leeks, while related to onions and garlic, have a milder, sweeter flavor, which forms the cornerstone of this comforting soup.

This particular recipe beautifully balances the sweetness of the leeks with the earthy notes of potato and carrot, creating a balanced and deeply satisfying flavour profile. The optional chicken stock adds a savory depth, but the soup is equally delicious made with just water, allowing the leeks to truly shine.

Portuguese Leek Soup Recipe

Here’s how to create this delightful Portuguese classic:

Ingredients:

  • Butter – 1 tbsp
  • Leeks – 2, reserve 1/2 cup of the white part of the leek (diced)
  • Onion – 1 medium size
  • Potato- 1 medium size
  • Courgette- 1
  • Carrot- 1 (to cook with the 1/2 cup of leeks)
  • Olive oil- 2 tbsp
  • Chicken stock cube- 1 (optional)
  • Water as needed

If you use the chicken stock do not add salt because the stock is salted.

Instructions:

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the diced onion and cook until softened and translucent, about 5-7 minutes.
  3. Add the chopped leeks (excluding the reserved 1/2 cup) and cook for another 5 minutes, stirring occasionally.
  4. Add the diced potato, courgette, and carrot to the pot.
  5. Pour in enough water to cover the vegetables. If using, crumble in the chicken stock cube.
  6. Bring the soup to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the vegetables are tender.
  7. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender and blend until smooth (work in batches if necessary).
  8. Season to taste with salt and pepper (remembering the stock is already salted if used).
  9. Serve hot, garnished with the reserved diced leeks.

For an extra touch of authenticity, a swirl of olive oil and a sprinkle of fresh parsley can elevate the presentation. Pairing this soup with a crusty bread for dipping is highly recommended!

Sopa de Alho-Porro or Alho-Francês is more than just a soup; it’s a taste of Portuguese culture and a testament to the power of simple, fresh ingredients. This recipe is easy to follow and provides a wonderfully warming and flavourful dish. *Bom apetite!*
