Homemade Beef Samosas: A Deliciously Spicy Recipe

Samosas are a truly versatile snack, perfect for parties, a quick bite, or even a light meal. While traditionally filled with vegetarian ingredients like potatoes, peas, and lentils, meat-filled variations are incredibly popular, offering a hearty and satisfying twist. Today, we’ll be focusing on how to make delicious beef samosas that will impress your family and friends. The key to a great samosa lies in a flavourful filling and perfectly crispy pastry.

Understanding Samosa Pastry

While you can buy pre-made samosa pastry sheets (often called ‘spring roll pastry’ or ‘filo pastry’ are suitable substitutes), the texture won’t be quite the same. Authentic samosa pastry is a shortcrust pastry made with flour, oil, and a touch of salt. Achieving the right flaky texture requires specific techniques that we won’t cover in this recipe, and using ready-made pastry simplifies the process for home cooks. However, if you’re feeling adventurous, there are many resources available online for making your own samosa dough from scratch, or maybe I´ll post that recipe as well!

Crafting the Flavorful Beef Filling

The heart of a fantastic beef samosa is its exquisitely spiced filling. This recipe utilises a blend of common Indian spices to create a robust and aromatic flavour profile. The key is to build layers of flavour, starting with the aromatics and then developing the depth with the powders.

Beef Samosa Recipe

Yields: Approximately 40-45 samosas
Prep time: 45 minutes
Cook time: 20-25 minutes

Ingredients:

  • Beef mince – 500g
  • Garlic paste – 4 tsp
  • Ginger – 1 tsp
  • Red pepper paste – 1 tsp (adjust to your spice preference)
  • Turmeric powder – 1 tsp
  • Coriander powder – 2 tsp
  • Cumin powder – 1 tsp
  • Tomato paste – 1 tbsp
  • Juice of half a lemon
  • Onion – 500g, finely chopped
  • Fresh coriander, to taste, chopped
  • Fresh mint, to taste, chopped
  • Salt, to taste
  • Green chillies, to taste, finely chopped (optional)
  • Samosa leaves/Pastry – 1 packet

Instructions:

  1. Prepare the Filling: In a large pan, brown the beef mince over medium-high heat.
  2. Spice It Up: Stir in the red pepper paste, turmeric powder, coriander powder, cumin powder, garlic and ginger paste. Cook for 2-3 minutes, allowing the spices to bloom.
  3. Add Tomato and Season: Add the tomato paste and cook for another minute. Season with salt, and add the lemon juice and green chillies, if using. Add the chopped onions to the pan and cook for 5 minutes on a high heat.
  4. Finish the Filling: Remove from heat and stir in the fresh coriander and mint. Allow the filling to cool completely.
  5. Assemble the Samosas: Take a samosa pastry sheet and cut it into equal parts. You will need two sheets per samosa.
  6. Filling and Folding: Place a spoonful of the beef filling onto one corner of a pastry sheet. Fold the pastry over to form a triangle, sealing the edges with a little paste made of flour and water. Repeat until you reach the top, creating a sealed triangular samosa.
  7. Fry or Bake: Heat oil for deep frying. Fry samosas in batches until golden brown and crispy. Alternatively, brush with oil and bake at 180°C (350°F) for 15-20 minutes until golden brown.
  8. Serve: Serve hot with your favourite chutney or dipping sauce.
  9. You can find the chutney recipe here as well.

Tips for the Perfect Samosa

  • Don’t overfill: Overfilling makes the samosas hard to seal and prone to bursting during frying.
  • Seal tightly: Ensure the edges are well-sealed to prevent the filling from leaking.
  • Oil Temperature: Maintain a consistent oil temperature. If the oil is too cold, the samosas will absorb too much oil; if it’s too hot, they’ll burn quickly.

Creating beef samosas at home is a rewarding experience. It allows you to control the ingredients and tailor the spice level perfectly to your preference. From the aromatic spices used in the filling to the satisfying crunch of the fried pastry, these samosas offer a delightful culinary adventure. Enjoy these flavorful treats on their own or with your favorite dipping sauce!
